It should be fine if you have a couple of bottles of soft drinks but I doubt they will allow whole packs of soft drinks.

Yes, you can check them in with your luggage (be sure to include a luggage tag), or in your carry on.

NCL has a BAGS program where they will deliver and check in the bags for you directly with the airline. There is a cost associated with this program and the program is limited to certain airlines.

Yes. All staterooms have refrigerators.
The amenities the ship's stateroom is just as in any hotel. Fridge, TV, coffee maker, ice buckets, beach towels, mini-safe, alarm clock, hair dryers, soaps and shampoo.

All staterooms have mini-fridges, that are stocked with items for purchase; there is a little bit of room if you need to store something, but if you need more room, simply ask your stateroom attendant to remove the items for you.

Regarding "Free-Style Dining"

If you do not have a table assigned can you go to the Main Dining Room for "formal/dress" dining? Does the Gem have a promenade of stores or all together as on the Dawn?

You are cruising Freestyle. There are no assigned times or seats for dinner. Just as in a regular restaurant, you can go anytime the restaurant is open and the seating is on a first come first serve basis. The restaurants are usually open for dinner from around 5:30 PM to about 10 PM.
You cannot make reservations for the main dining rooms. The specialty restaurants do accept reservation.
As far as shopping is concerned, there are is a shopping area with some shops but not a big selection.

Absolutely; dinner in the main dining rooms is on a first come first served basis on each night of the cruise whether it be formal or casual evening. As for the shops, I wouldn't say there is a Promenade of stores, but there are a few to shop around in.

Best option would be to check out the hotel packages on NCL's website. They have a list of hotels there. You can either book it yourself or call NCL and have them make the reservation for you.
Other option would be too look up the port address and make your reservation on any of the hotel travel websites.

What is the weather like in Canada the first 2 weeks in October?

Leaving Sept 30th for a 10 day cruise to eastern Canada... Not sure what to pack... Seems like shorts to light sweaters and jackets, What about rain that time of year?

Normally the weather in early Oct, is around 65 degrees and dips to 40's at night.
Remember that on board the ship, you have to add wind chill factor with the ship travelling around 20 knots.

Does Oct 4th departure of Eurodam from New York to Quebec City pass nearby Statue of Liberty or Ellis Island for photos?

We are staying in NYC day before and don't want to book tour boat to see these sights if Eurodam departure route passes by both of these sights.

Yes, the ship passes in photographic range of the Statue of Liberty and Ellis Island.
However, if you take the boat tour it will allow you to walk on the islands.

No, you do not require passports for round trip cruises. You will need your birth certificate and a photo id.
It is advisable to carry a passport just in case you miss the ship and have to fly back home.

The balconies have railing and plexi-glass in the bottom half. The top half is open and the balcony deck above you will be the roof for your balcony.
