Yes, all staterooms have hair dryers.
The amenities the ship's stateroom is just as in any hotel. Mini-fridge, phone, TV, coffee maker (not in inside & ocean view staterooms), ice bucket, beach towels, mini-safe, hair dryer, liquid soap and shampoo.

The sodas onboard are not complimentary. We have the Soda package available to purchase that would give unlimited foutain soda or you may purchase can sodas separately. Bottle water is also available onboard at a charge. We do have tap water available at no additional cost. Guest are also able to bring there own soda and bottled water onboard. Has to be factory sealed prior to getting onboard.

There are no free soda's on board any NCL ship, you can either purchase them individually, or purchase an unlimited package; as for the water, this can be found at any faucet on the ship, it is perfectly safe to drink.

Boarding process basically goes by the time you arrive and what number you are given in that process.
Boarding usually doesn't begin till around 11:30am - noon; and that is usually when there might be a wait time; if you arrive by 1pm or so, there might be a wait for the counter, but not to board the ship.
The color code for your luggage tag to get on the ship just assists the crews to the area of the ship your bags need to go, then the look at stateroom number, etc.

The luggage tag color provides the crew a visual aide as to the destination (i.e., deck) of the luggage on the ship. Guests are given a numbered card at check-in for boarding which I believe is based on arrival time at the terminal. Priority boarding is provided for guests staying in suites and Latitude Members.

There are phones located throughout the ship that you could use to call someone's stateroom; but other than that, the answer would be no to your question.

No. The ship doesn't provide you with any walkie-talkies for you to communicate with your family onboard the ship. Don't bother buying any commercial available devices. Most of the devices are low powered and wouldn't work properly since the ship is mostly metal.

No, the ship does not provide communication devices nor do they rent them. You can use the onboard phones and voice mail for your stateroom or pre-arrange times/places on the ship you meet as a group.

If there is a time change at one of the ports you visit; you will be notified as to which night to move your clacks forward or backwards to coincide with the local time of where you are visiting.

Yes, when the ship enters a new time zone, you will be informed about it onboard the ship and the ships time will be adjusted the night before to match the local time.

Ship's time is always local to the port of call. Any changes in time will be listed in the daily activity sheet left in your room each day.

Children would be required to be with their appropriate age group that we do have onboard when it comes to the Kid Club programs.

You will need to check with the staff onboard the ship. From what I understand, they are quite strict about the 3 years old age restriction. Check if they can make an exception for your grand daughter.
