NCL has started offering an ultimate dinner package where you can dine in any of the specialty restaurants for a fixed price for the entire length of your cruise. There is a FAQ section on NCL's website which will answer most of your questions on the package

Question

Can we bring a case of non-alcoholic beer on board the Dawn for wester carribean cruise?

I would suggest calling NCL and checking on it. You cannot bring your own alcoholic drinks other than wine and champagne (corkage fee applies). You are allowed to bring sodas and water onboard the ship. Since they do serve non-alcoholic beer onboard the ship, my guess is that they probably won't allow it but you can always call and check with NCL.

Question

what if i do not want to pay the tip

i prefer tipping

You refer to tipping. There is no mandatory tipping on NCL. There is a daily service charge, but it is not a tip. The service charge is part of the crews pay and may be reduced if you receive poor service. If you have a service problem bring it to the attention of management, if they cannot resolve the issue, you may reduce the charge. Most add tips to individual staff that provide excellent service above the daily service charge.Almost all of the main stream cruise lines utilize this method.

You can discuss your concerns with the Guest Relations desk and you can modify the service charge as you wish.
Keep in mind though, these are very hard working individuals who, in my opinion, deserve every penny. Their goal is for you to have the best vacation possible. If there is an issue with a particular individual, bring it up with Guest Relations so that they have the opportunity to correct the situation while you are on board.

Are there any advantages to booking your shore excursions before the cruise? Why can't I access choice for time?

On our very first cruise, we booked through NCL, then on our last 3 cruises we have just worked out excursions on shore with them personally. Its been real easy and they really work with you on whatever you like to do. Seems to save a lot of money as well.

as someone else said, they do have on board excursion desk but I have been on some cruises where the line was quite long and took long time to get helped. plus if you wait, your excursion and/or time may be sold out.
NCL does have an excursion number you can call to help and they are very helpful responding to any questions you may have regarding a particularly excursion. some popular ones sell out way in advance and others are no problem booking on the ship.

answer 3
The primary advantage in my opinion is securing a spot for your excursion of choice, as their is a chance it could sell out. Not too sure about why you cannot access the choice for time, but it may be possible only one time is available, or the other time may be sold out. You can call NCL or your travel agent directly to discuss.

No, not really. As it can get a little adult themed oriented. I do believe there is a family version of the White Hot Party held on the same evening, but earlier.
