There are none listed, as per the link below, for getting to the Manhattan Cruise Terminal from New Jersey. You could try calling NCL, number in the link below also, to see if there are any options. Depending on the New Jersey hotel location it could possibly be a relatively short taxi ride. Check with the hotel and see if they have any recommendations.

Cell phones will work on the ship but it will turn out to be very expensive especially if you want to talk to someone on the ship.
I suggest downloading the iConcierge app from your android or Apple store. The app itself is free and it will allow you to check the daily schedule, make reservations etc. For a small fee, you can add text messaging which will allow you to text anyone else on the ship.

I have on board credit, and If I link my room and the other room to my cc, how does the on board credit being credit? Will both room credit goes to my cc at the end of the cruise?

Yes, each room account will be credited accordingly and billed to your cc at the end of the cruise. You can also keep tabs on your room accounts via the TV, iConcierge app or asking for a printout from guest services at any time during your cruise.

Suite guests followed by passengers walking off with their luggage are the first to disembark. Remaining passengers disembark in 20-30 minute intervals, based on the time slot they chose a day or two before return, beginning about 30-45 minutes after return to port. Usually the ship is cleared of all passengers within 2-3 hours of return to port. Note, limo, taxi or private pickup is across 12th avenue from the pier.

Yes you can bring your hats in your hand but each person is allowed 2 pieces of luggage plus a carry on.

How much do drinks normally cost and are martini's included? Wanting to know if it's really worth getting the liquor package

The answer to that question really depends on your drinking habits. If you are an average drinker with one or two drinks per day then the cost is not worth it. If you plan to drink more than 5-6 drinks per day then you could justify the cost. Also remember that all adults in your party must purchase the drinks package.
NCL doesn't publish the price of the drinks but the cost is what you can expect to pay at any regular bar or restaurant. You can price out what your daily drinking cost would be to see if the package is worth it.

From a view perspective any balcony will be nice. Location depends more on where you'd prefer to be. For example, do you want to be closer to the action on decks 6-8 or outdoor venues on deck 15 and higher. Are you prone to motion sickness where mid ship and lower decks have less motion. Do you want to be close to the stairs/elevators and do you want to be away from venues which may have late night music (i.e., Fat Cats)..

GTY is for guarantee accommodation. The rate you got the room is a discount rate which means that the room will be assigned any time after the final payment is done. In some cases, the cabin may be assigned at the time of check-in. Log into your NCL account and check often for updates.
If you want to pick your room, you may have to pay a higher price than the GTY cabin rate.

As far as the location of the balcony is concerned, it comes down to personal preference. For me. I don't care if the cabin is in the port or starboard side, front or aft section. I suggest picking one location for this cruise and on your next cruise pick another location and see if you have a preference.
